Soy Sauce Steamed Fish

This is one of my little girl's favorite steamed fish. Fish is soft and sauce is wonderful. She will scoop a lot of the sauce and mix it with her rice.
My FIL's simple recipe again. :-)

Ingredient :

1 palm size mayau fish
8 slices of fresh ginger
8 slices of garlic
1 stalk of spring onion - cut into 2 inch length
dash of sesame oil

Sauce :

2 tbsp light soy sauce
1 tbsp rice wine
3 tbsp water

Method :

Arrange ginger, garlic and spring onions on the plate.

Then, place fish on top and top the balance of ginger, garlic and spring onion onto fish.

Place into a preheated steamer and steam fish at high heat for 5 mins.

After that, pour in the sauce and steam fish for another 2 to 3 minutes.
( bigger and thicker fish will need more steaming time )

Voila, fish is done.
Add a dash of sesame oil onto fish.
Serve hot with steamed rice.

Baked Fish

Saw this recipe from Reel and Grill while searching for fish recipes.

The fish is oven baked where all the tasty juices and flavours are kept inside the aluminium foil. And as for the fish, it was soft and sweet without the fishy smell, maybe because of the lemons. :))

Thumbs up for this dish!!

Ingredients :

1 medium fish
11/2 tbsp ginger - julienned
2 cloves garlic - sliced
2 tbsp green onion - cut into 2 inch length
1/2 lemon - sliced
1 tbsp butter
1 chicken buillon / seasoning - omitted
1/2 tsp salt
a few dash of black pepper

Method :

Preheat oven to 200C.
( Top and bottom heat )

Season fish with salt and pepper.
Put some ginger and garlic inside the fish cavity.

Using aluminium foil, arrange some ginger, garlic, green onions, lemons and butter on the bottom of fish.

Then, arrange the balance ginger, garlic, green onions and lemons on top of fish.
( Divide the ingredients properly )

Fold the aluminium foil tightly to cover the fish.
Secure the ends by folding the foil as well.
Then, baked in a preheated oven for 30 minutes.

When the fish is ready, transfer it to a large plate.
Open and fold down the aluminium foil.
( Caution : very hot steam )
And VOILA, this fragrant and yummy fish is done.
Serve immediately with steamed rice.

Very soft meat.

Gave some to my princess but she wanted more!! hehe.

Fish Cake BokkEum ( Korean Soy Sauce Fish Cake )

This is another one of the Korean non spicy fish cake side dish. Needless to say, it's a good keeper too!!

Well, have been cooking and stocking these dishes in my fridge recently. Hubby's been working late lately and won't be home for dinner, so I cooked simple dishes for the kids and as for myself, these korean side dishes will be enough. Saved up a lot of my time, hehe.

Ingredients :

5 fish cakes
1/2 onion
1/4 carrot
2 green chillies ( deseeded )
( cut the above into thin slices )
2 tbsp oil
1 tsp sesame seeds

1 1/2 tbsp soy sauce
1 1/2 tbsp honey
1/2 tbsp water
1 tsp minced garlic
1 tsp sugar

Method :

Preheat oil in wok.
Add in fish cake and stir fry for about 5 minutes.

Add in carrots, onions and chillies.
Mix till well combined and stir fry for another 2 minutes.

Then, add in sauce and stir fry till the onions are cooked.

Sprinkle with sesame seeds and off heat.

Dish up and serve.

Kept some in a container and placed in fridge.

Steamed Red Tilapia With Hot And Sour Plum Sauce

I've got to admit that I will buy a red tilapia fish home everytime I see them still alive and jumping on the fish monger's table, haha.

Today, I'm going to steam this fish with hot and sour plum sauce. The meat is so tender and doesn't have any mud smell at all, plus the sauce makes it super delicious.

Ingredients :

1/2 of a large fish

Sour plum sauce

1 tbsp fermented soy bean
1 1/2 tsp minced garlic
1 tbsp sour plum sauce
2 chili padi - chopped
2 slices ginger - julienned
1 tbsp oil
1/2 tsp sugar
1 tbsp water
( mix them all up )

Method :

Run the fish through hot boiling water for 2 seconds to get rid of any fishy smell

Preheat steamer and pour the sauce evenly on top of fish
Steam for 8 to 10 minutes
( a whole large fish should take about 15 minutes )

Dish up and serve hot

***Recipe adapted from Elinluv's Titbits Corner with slight changes, thanks Elin :)

Pan Fry King Salmon Steak

King salmon steaks were on sale in Jusco last week. Since I had always wanted to try it, bought 2 steaks back home.

Hey, not bad. It's not so oily compared to salmon trout and it's much cheaper too. :))

Ingredients :

1 salmon steak - size of a palm
1/3 tsp salt
1/3 tsp black pepper
1 tbsp olive oil

Method :

Marinade salmon steak with salt, black pepper and olive oil.

Preheat a non stick frying pan and pan fry salmon steak in medium heat. ( without oil )
Pan fry for about 4 minutes each side. ( not too long as it will dry up the fish which will turn tough )

Dish up and serve hot.

*** Will buy in future : salmon steaks - king salmon
                                                salmon fillet - salmon trout

Ikan Kembung Rebus Goreng

This is hubby's favourite fried fish. I don't know what it's called in English. Is it called slimy mackerel? It's called " suk yuee " in Cantonese, so hubby told me it's called " familiar fish ".

" suk = familiar " , " yuee = fish "

Can really give me heart attacks sometimes........

The reason I post this is because the fish monger in the wet market taught me a way to clean this fish. I told her I don't like the bitter taste of the internal organs, so she removed the head and tail for me.

Then she told me to wash the fish lightly in a big bowl filled with water like above and not in running water which I usually do, in order not to flake out the meat. This is something really new to me and I like this method. :)

Then fry the fish as usual till cooked and crispy.

As for the dipping sauce ( which she taught me also ), just mix together 1 tsp of minced garlic, 1 tsp minced onion, 1 finely chopped chili padi and 2 tbsp rice vinegar or lime juice.

Red Snapper In Teriyaki Sauce

I am trying to cook more fish for my kids nowadays and started browsing through many bloggers' fish recipes. Saw this recipe in Wokkingmum's blog and decided to give it a try.

This dish turned out to be a success because hubby and princess loved it. Thanks for sharing. :)

Had red snapper, so I used red snapper instead of cod fish. :P

Ingredients :

red snapper - size of a palm
3 tbsp oil for shallow frying

Marinate : ( to marinate fish for at least 30 minutes )

1 tbsp mirin
1 tbsp sugar
1 tbsp wine
2 tbsp soy sauce

Method :

Preheat a non-stick pan with oil and fry fish in medium low heat till lightly burnt on both sides.

Pour away excess oil and pour in remaining marinate.
Cook till sauce thickens and coated onto both sides of the fish.
Dish up and serve hot.

Fried Fish In Soy Sauce

Here's another simple dish often cooked by my grandma. I prefer my grandma's cooking compared to my mum's, maybe because it was my grandma who took care of us when we were kids. At that time, my grandma likes to use black pomfret to fry. It's much cheaper than other larger fishes I guess. :P

My siblings and I can just eat the rice with the soy sauce. The fragrant smell is just wonderful.

Ingredients :

threadfin fish ( ma yau ) - size of a palm ( can use black pomfret )
oil for shallow frying
soy sauce

Method :

Heat a non-stick pan with oil.
When the oil is shimmering, slowly lower fish into oil.
Fry in medium heat till brown on one side before flipping over to brown the other side.
Remove to serving plate together with 3 tbsp of oil from frying.
Add 2 tbsp of soy sauce into the oil.
Serve warm with white rice.

West Lake Fish

My MIL has been advising me numerous times to feed more fish to my children. Well, my parents-in-law do eat lots of steamed fish. And they are very healthy.

Fish is very important for growing up children. It has the omega-3 fatty acid that helps improve children's learning and behaviour. The fish oil helps brain development and thus improves brain health.

It can also reduce the risk of having a heart attack or stroke for adults by cutting down the levels of bad cholesterol.

And yes mother, I'm trying my best to cook more fish for them. :)

Ingredients :

threadfin ( ma yau ) fish - size of a palm ( or can use small pomfret )
( I like to use ma yau because of it's soft texture - very suitable for small kids )
1 tsp salt
8 spring onions - shred finely
8 slices ginger - shred finely
2 tbsp oil
2 tbsp soy sauce
1 tbsp rice wine

Method :

Rub both sides of fish with salt.
Heat fish over high heat until cooked, about 8 to 10 minutes.

Preheat oil in a non stick pan and saute spring onions and ginger till fragrant.
Add soy sauce, rice wine and juices from cooking fish.

Pour over fish and serve hot.
