Corn Soup

I still remember the first time I drank corn soup was when I had dinner in my sis's MIL's house. Well, I was surprised that corn can be used to boil a Chinese style soup at that time, haha.

Nowadays, I boil this soup often because my kids love it too. :) The natural sweetness from the soup just makes u crave for more!!

Ingredients :

1 large corn
1 large carrot
Size of a fist of pork loin or tenderloin
1.5 litre of water
1/2 tbsp salt or to taste

Method :

Bring water in a small pot to boil and add in pork loin. Continue to boil until all the scums from the pork rise to the surface. Remove pork and wash away all the scums.

Cut carrot and corn as above.

Put everything except salt into a pot and bring to boil.
Then, switch to low heat and boil for 1 1/2 to 2 hours.

Off heat and add salt.
Serve warm.

Express Congee

Had been cooking a lot of these nowadays. One way to give more fluids to the kids' body. :P

My kids don't drink a lot of water, so soup is very important in our family. A soup for dinner is a must have everyday.

My kids and I usually have this express congee for lunch. Simple, fast to cook and nutritious. :))

Method :

Take half of the boiled soup for dinner into a small pot.

Bring soup to boil and add in leftover rice from yesterday.

Stir the rice into soup evenly and bring the soup to boil again.
Let it simmer for about 2 minutes, stirring once a while.

Then, off heat and you'll have a tasty congee done. :)

Transfer to a bowl and serve warm.
My kids loved it!!!

** Goes well with other soups too. :D

But, it is said to worsen the condition of people who has colds and cough after consuming this soup. So, better not to boil this soup when someone in the house is in this condition. :P

In another medium large pot, put cleaned pork loin together with the rest of ingredients except the salt and mussels.

When the water starts boiling only you add in dried mussels to get rid of the fishy smell.
Bring to boil and switch to low heat and let it simmer for 2 to 2 1/2 hours.

Add salt to taste.
Serve hot.

Watercress Soup

This is a perfect soup to clear our body heat and to smokers, it is very effective in cleansing the lungs from toxins.

Watercress is said to contain significant amounts of iron ( benefit to people with anaemia ) , calcium and folic acid, in addition to vitamin A and C.

The soup tastes naturally sweet with a soothing effect and my family loves it.

Ingredients :

3 handfuls of watercress - after trimming
1 tbsp pitted dates
5 small scallops
size of a fist of pork loin
1.5 liter water
salt to taste

Method :

Bring water in a small pot to boil and add in pork loin. Continue to boil until all the scums from the pork rise to the surface. Remove pork and wash away all the scums.

Fill a medium pot with water and add in pork loin and dates.
Bring to boil.

When the water starts boiling only you add in watercress and scallops.
This is to prevent the soup to become bitter from the watercress and fishy smell from the scallops.

Bring back to boil and switch to low heat and let it simmer for 2 to 2 1/2 hours covered.
Add salt to taste.
Serve hot.

The first time I tasted this soup was during dinner at my FIL's house. Everyone seemed to like the soup because it tasted naturally sweet with soothing effect.

Later that night, my MIL showed me what is kudzu root like together with her soup recipe.

This starchy white root is said to reduce both hangovers and alcohol cravings and is an ancient Chinese medicine for cold and has health strengthening  properties too.

Nowadays, I often boil this soup and it had became one of my regular soups for dinner.

In another medium large pot, put cleaned pork loin together with the rest of ingredients except the salt.
Bring to boil and switch to low heat and let it simmer for 2 to 2 1/2 hours.
Add salt to taste.

Malabar Spinach Soup aka Chan Choy Tong

This is a very nutritious and easy to cook soup. The malabar spinach has a soft texture and tastes sweet.
It is also high in vitamin A, vitamin C, iron and calcium.

My mom used to tell me that people who smokes can benefit from drinking the soup. It helps to nourish the lungs. But, to me, I do know that it's really good for our bowel movement. :P

Ingredients :

3 handfuls of malabar spinach - after trimming
1 tbsp anchovies - deveined
1 salted egg
1 litre water
1 tbsp oil
salt to taste

Method :

In a dry non stick wok, saute anchovies till dry.
Add in oil and saute anchovies till lightly brown and crispy.

Add in water and bring to boil.

When the water starts to boil, add in malabar spinach and stir evenly.
Let it simmer for a minute then add in salted egg.
Let the egg cook without stirring. U can break the egg yolk with a spatula when it's half cooked.

Finally, taste the soup first before adding salt because the salted egg has added saltiness to the soup.
Let it simmer for another 2 minutes.
Dish up and serve hot.
