Mushrooms Wrapped in Sukiyaki Pork Belly



One of  the dish that I like to cook when I have sukiyaki pork belly in hand. Very fragrant dish cooked with butter and my whole family love it :)

Ingredients :


10 pcs of sukiyaki pork belly
1 pkt of straw mushrooms
2 tbsp butter
1/3 tsp salt
1/3 tsp black pepper

Method :


Blanch mushrooms, drain and set aside.
Season pork belly with salt and pepper.
Then, wrapped mushrooms with pork belly.


Preheat non stick pan with butter ( medium low heat )
Place in pork belly wrapped mushrooms on to pan.
Pan fry in medium heat till brown on both sides. ( about 3 minutes on each side )


Dish up and serve hot.

Hawaiian Style Spam Musubi


This spam musubi is a winner for lunch or even snack. Easy to prepare and kids love love love them. :)

INGREDIENTS :


1 can spam / luncheon meat - cut into 5 pieces
2 1/2 nori / toasted seaweed
3 cups cooked shortgrain rice- hot


Cut nori into half


luncheon meat can used as a rice mould

MARINATE :

1 tbsp mirin
1tbsp sugar
1 tbsp soy sauce


Marinate spam for 30 minutes.

METHOD :



Preheat 1 tbsp oil in a non stick pan.
Pan fry spam till caramelized.



Dish up, strain and let cool.

ASSEMBLE :







Assemble rice and spam wrapped in nori.
Wrap the whole snack in clingwrap to avoid rice to dry out and to keep them in place.
Done :)

Lotus Root Meat Cake


School has started and had been quite busy being my children's mummy, cook, maid and chauffeur too!! Well, I don't have to worry much about my little boy because food is provided in school everyday. But I have to prepare bento lunches for my little girl since she's in the afternoon session class this year.

My first bento lunch box for her
Glad that she didn't complain with what I had prepared for her, hehe. 

Ingredients :


300g minced pork
100g lotus root - finely chopped
1 tbsp chopped spring onions
1 egg
1 tbsp cornflour

Seasoning :
1 tsp salt - I used 3/4 tsp ( too salty for my liking )
1/2 tsp sugar
1/2 tsp sesame oil
1/2 tsp pepper

Method :



Mix everything together to form a paste.



Form the minced meat mixture into small cakes.
Preheat a non stick pan with oil and shallow fry meat cakes over medium low heat till golden brown on both sides. ( Do not fry too long or meat cakes will turn very dry and tough )


Remove and drain off excess oil on kitchen towel.


Arrange on plate and serve.

Simmered Meatballs With Mushrooms


Had been cooking very simple meals since moving to our new apartment. Most of them are mainly from cookbooks or repeating dishes cooked before.

This recipe is adapted  from the Hawker Secret Recipe Cookbook and the kids like it because of the soft meat and crunchiness of the sweet turnip combined together. :)

Ingredients :



( A )
200g minced pork
60g ( 5 tbsp ) sweet turnip ( sengkuang ) - chopped
1/2 egg
1 tbsp cornflour

( B )
10 Chinese mushrooms - soaked till soft
1 stalk spring onion - cut into 2 inch length
10g carrot slices
4 ginger slices
1/2 tsp minced garlic
300ml water

Marinate :
1/2 tsp salt
1/2 tsp sugar
1/2 tsp white pepper
1/2 tsp sesame oil

Seasoning :
1/2 tbsp oyster sauce
1/2 tbsp light soy sauce
1 tsp sugar
1/2 tsp white pepper
1/2 tsp sesame oil
1 tbsp shaoxing wine

Method :



Mix ( A ) with marinate and form mixture into meatballs.



Deep fry till golden brown and cooked.
Remove and drain well.


Leave 2 tbsp oil in wok and saute ginger slices till fragrant.
Then, add in minced garlic.


Add in mushrooms and seasoning and stir fry till fragrant.


After that, pour in water and bring to boil.
Cover, simmer at low heat for 5 minutes.


Add in meatballs and simmer for another 5 minutes.
Then, switch to high heat and add in carrot slices and spring onions.



Toss well and thicken with cornstarch solution.


Remove and serve hot.

Dark Soy Sauce Pork Belly


This is my mom's favorite dish when she does cooking at home. ( Well, my mom doesn't cook much, LOL ) Simple, easy to cook and tastes good.

One of my regular pork dishes when I ran out of ideas on what to cook for dinner. :)

Ingredients :


250g pork belly - sliced thin
3 cloves shallot - lightly bruised
2 cloves garlic - lightly bruised
1 tbsp soy sauce
1/2 tsp dark soy sauce
1 tsp sugar
1 cup water
2 tbsp oil

Marinate :
1 tbsp soy sauce
1 tsp dark soy sauce
1 tsp sugar
dash of pepper
1 tsp oyster sauce


Marinate pork belly for at least 1/2 hour.


Preheat wok with oil and saute garlic and shallots till fragrant.


Add in pork and stir fry till pork changes colour.
Stir fry for another 5 minutes.



Add in water and bring to boil.


Cover wok, lower heat and let it simmer for about 20 minutes.
Then, add soy sauce, sugar and dark soy sauce and mix till well combined.


Cover wok and simmer for another 5 minutes or till gravy is thick.


Dish up and serve with rice.
