Butter Fried Rice

Trying my best to have rice for lunch everyday for my kids. I guess rice will keep them full until tea time rather than having buns or noodles.

This butter rice is very fragrant and goes very well with rendang chicken or beef. :P ( Eating it alone is not bad either )

Both my kids finished the whole pot, leaving nothing for their mummy!

Recipe adapted from Food.com with some modifications.

Ingredients :

3 cups of rice
2 tbsp butter
1 egg
1 tsp minced garlic
1 tsp minced shallot
1 star anise
1/2 tsp salt or to taste

Method :

Preheat a non stick wok and add in butter till melted ( medium heat )
Add in garlic and shallots and saute till fragrant

Add in star anise and saute for another minute

Add in rice and mix everything up till well combined
Stir fry the rice for about 3 minutes

Make a hole in the middle of rice and add in egg

Mix the egg with rice till well combined and stir fry for another 5 to 8 minutes.
( Till the rice smells fragrant and a bit dry )
Add salt to taste.

Dish up and serve.

Kimchi Fried Rice

Yesterday, I felt like cooking something different for hubby and myself for dinner. Since the kids had an early dinner, why not clear all the leftover rice in the fridge?

So, I cooked kimchi fried rice, satay and miyuk guk ( korean seaweed soup ) for dinner. I was thinking to make it look more appetizing on the table, so I served it like the picture above.

And when hubby came to the dining table, the first thing he said was " WAH, WE'RE HAVING AIRPLANE MEAL TODAY AH? "

Whatlah!

Ingredients :

1 cup kimchi - cut into bite size
2 rice bowls of rice
2 tsp sugar
2 tbsp kimchi liquid
1/2 tsp salt
1/2 tsp sesame oil
sesame seed to garnish ( omitted )
2 tsbp oil

Preheat wok with oil and fry the kimchi.
Add sugar and fry for about 5 minutes.

Add rice and mix everything up evenly.
Stir fry for 2 minutes.

Then, add in kimchi liquid.
Stir fry for another 10 minutes.

Lastly, add in salt and sesame oil.
Stir fry for 2 minutes and it's done.

Dish up and sprinkle with sesame seeds if u wish.

Express Congee

Had been cooking a lot of these nowadays. One way to give more fluids to the kids' body. :P

My kids don't drink a lot of water, so soup is very important in our family. A soup for dinner is a must have everyday.

My kids and I usually have this express congee for lunch. Simple, fast to cook and nutritious. :))

Method :

Take half of the boiled soup for dinner into a small pot.

Bring soup to boil and add in leftover rice from yesterday.

Stir the rice into soup evenly and bring the soup to boil again.
Let it simmer for about 2 minutes, stirring once a while.

Then, off heat and you'll have a tasty congee done. :)

Transfer to a bowl and serve warm.
My kids loved it!!!

** Goes well with other soups too. :D

Simple Fried Rice

Weather has been very warm as usual plus hubby is in outstation. This kind of situations make me very very lazy to cook, but kids have to eat anyway. Until today, my fridge had stored quite a lot of leftover rice. Since the kids love chinese sausage, I'll cook them fried rice for lunch today. :)

Ingredients :

4 bowls rice ( kept in fridge overnight )
1 pair chinese sausage - cut into very small pieces
2 eggs - lightly beaten
1/2 onion - shredded
4 tbsp light soy sauce
oil

Method :

Heat 3 tbsp oil in a non stick wok.
Add in onions and saute till soft, then add in chinese sausage.
Saute for another 2 minutes under medium low heat.
Push onions and chinese sausage to the side of the wok, turn to medium high heat and add in eggs to fry like above.

When the eggs are half cooked, mix them all up evenly.

Finally add in rice, mix them evenly and add in soy sauce.
Stir fry at high heat and when rice grains at the side of wok starts popping, it's done.
Dish up and serve.

Crabstick sushi

Saw some crabsticks sitting in the fridge this morning. Why not make some crabstick sushi for lunch?

Ingredients :
1 cup calrose rice
2 cups water
1 1/2 tbsp vinegar
1 tbsp castor sugar
Crabsticks ( panfried with 1 tbsp oil in a non stick pan )
Roasted seaweed ( nori )
Mayonnaise

Method :

Cook rice with water in rice cooker.
Once ready, transfer rice to a big bowl and add in vinegar and sugar. Mix thoroughly.
Cover bowl with a damp cloth to prevent rice from drying out while waiting for it to cool.

Lay bamboo mat on table. Place one sheet of nori on the bamboo mat.
Spread 2 to 3 heap tablespoonfuls of rice on the nori.
Place ingredients on the layer of rice and roll once to make a long sushi log, squeezing slightly along the entire roll.

With a sharp knife, slice off the ends and the rest of the sushi log into 2 cm thick pieces.
