A very delicious and healthy chicken recipe that I like to cook most of the time. :P
It's best to use free range chicken because free range chicken will have less fat and the meat is not so soft too compared to the ordinary ones bought from the wet market.

Ordinary ones from wet market

Ingredients :
100g ginger - grounded
2 tbsp chopped spring onions
2 chicken whole leg or 1/2 chicken
Seasoning :
1 tbsp oyster sauce
1 tbsp light soy sauce
1 tbsp shaoxing wine
2 tbsp shallot oil
1 tbsp sesame oil
Method :
Mix the grounded ginger, spring onion and seasoning together.
Keep aside.
Bring 600ml water in a pot to boil.
Rub chicken with 1/2 tbsp salt and cook in boiling water for 10 minutes.
Dish up and drain well.
When the chicken has cooled, chop into small pieces and mix with ginger sauce.
Arrange on a plate and serve.
