It's Halloween and Halloween means abundance of cheap pumpkins all around. :D
Loved the sweet flesh and only got to know about the nutritional values after searching the internet!

Tastes superb! Sweet, crunchy and not salty after frying
After frying
Ingredients :
Pumpkin - cut into small chunks
2 tbsp dried shrimp - fried till crispy
1 tsp minced garlic
5 tbsp oil
water
1/2 tsp salt ( optional )
Method :
Heat oil in wok and fry dried shrimps till cooked and crispy.
Dish up and set aside.
With the remaining oil in wok, saute minced garlic till fragrant.
Add in pumpkin and stir fry for 2 minutes.
Add in water just enough to cover the pumpkin ( photo above ) and salt.
Bring to boil, lower heat and let it simmer till pumpkin is soft but not mushy.
Dish up and sprinkle dried shrimps on top.
Serve hot.
