Bitter gourd is generally said to effectively clears our body heatiness, but besides that it has excellent medicinal virtues too.
It improves the conditions of people with diabetes, piles, constipation, blood disorders, respiratory disorders, alcoholism, cholera, etc.
But, do not consume more than 2 bitter gourds a day. It can cause mild abdominal pain and diarrhoea. And excessive consumption can result to preterm labor for pregnant women.
I like to cook bitter gourd this way because it won't taste bitter and not so oily compared to cooking it with meat. :)
Ingredients :
1 medium size bitter gourd
4 large eggs
1/3 tsp salt
1/3 tsp white pepper
oil for frying
Method :
Cut bitter gourd into thin slices
Squeeze out the bitter juice from it in water mixed with 1 tsp salt
Ready to cook
4 eggs lightly beaten with 1/3 tsp salt and 1/3 tsp pepper
Preheat 2 tbsp oil in a wok and saute bitter gourd for 2 minutes
Remove and transfer it into the eggs mixture
Discard away bittergourd juices in the wok and preheat another 2 tbsp oil
Return the bitter gourd and eggs mixture into wok
Fry till the bottom side has turn brown
Then flip to other side to brown
Dish up and serve hot
