Went to the wet market and as usual to the vege stall that I frequent. Being a regular there, the aunty always give me ideas on what to cook and which vege is fresh on my every visit.
Her idea today was long beans omelette, since the long beans are very fresh. So, here it is, for my dinner.
Ingredients :
8 long beans - cut into very small pieces
4 large eggs
( lightly beaten with 1/2 tsp salt, 1/2 tsp soy sauce and dash of pepper )
Method :
Preheat a non-stick pan with 2 tbsp oil.
Stir fry long beans for 2 minutes, dish out and add into the egg mixture.
Heat 2 tbsp oil in pan again and pour in the egg mixture making sure the long beans are spread evenly.
Cook till the bottom side is brown, then flip over for the other side to cook.
Dish up and serve hot with rice.
