Well, here's my own way of cooking, very similar to my moms but of course not as tasty as hers.
I used 2 deboned chicken thighs because my choosy eaters are indeed lazy bums. Ha! Ha!
Ingredients :
2 chicken thighs or half a chicken
5 whole shallots - peeled and lightly bruised
2 star anise
50 ml light soy sauce
1/2 tbsp oyster sauce
3 tbsp sugar
200 ml water
cornstarch solution ( 1 tsp cornflour + 3 tbsp water )
Method :
Preheat 2 tbsp oil in wok and saute shallots and star anise till fragrant.
Add in soy sauce, oyster sauce, sugar, water and cornstarch solution.
When the sauce starts to bubble, add in chicken ( skin side down ), switch to low medium heat and let it simmer for 10 minutes covered.
Turn chicken over to the side for another 10 minutes or till cooked.
Dish up the chicken thigh and leave aside to cool before cutting.
As for the sauce, you can adjust to your liking with soy sauce or sugar.
Finally, cut chicken into serving pieces and drizzle sauce over it.
*** Tastes more yummy if half a chicken is used.
My aunt taught me a similiar soy sauce chicken, except that she didn't fry the aromatics, just simmer the gravy until fragrant and then put in the chicken to "soak" until cooked.

Do cook this dish for your children. This dish brings back sweet memories of my childhood. After eating it, I'm sure your children will have sweet memories like mine when they grow up. :)
