Saw this soup recipe from Table for 2 or more.... that day and was thinking to give it a try. I usually add red dates to my soups because I find red dates are nutritious, but my choosy eaters fancy clear soups more.
Ingredients :
1 medium size old cucumber - discard both ends ( about 1 inch ), cut into chunks and seeds removed
Size of a fist of pork loin
Size of 1/3 of a palm of dried cuttlefish
1.5 litres of water
1/3 tbsp of salt or to taste
1 tsp soy sauce
Method :
Bring water in a small pot to boil and add in pork loin. Continue to boil until all the scums from the pork rise to the surface. Remove pork and wash away all the scums.
In another medium large pot, put cleaned pork loin together with the rest of ingredients except the salt and soy sauce.
Bring to boil and switch to low heat and let it simmer for 2 to 2 1/2 hours.
Add salt and soy sauce to taste.
Serve hot.
