Last Saturday was my kid's graduation and awards day. As usual, made a layer cake and some peanut cookies to thank the teachers. :))
I find the layer cake quite moist and soft, unlike the usual ones that are quite dense. About the taste, yums... Fragrant and not too sweet. :)
200g caster sugar
125g plain flour
340g butter - Churn Butter
10 egg yolks
4 egg whites
1 tsp baking powder
1 tsp vanilla essence
1 tsp 5 spice powder
1 tbsp brandy
Grease and line bottom of an 8" x 8" cake tin.
( Do not grease sides of tin )
Preheat oven at 180C, top and bottom heat.
Sift flour, baking powder and 5 spice powder together. ( twice )
Cream butter till soft and fluffy.
Whisk egg whites and vanilla till soft peak.
Gradually add sugar till stiff peaks form.
Add yolks one at a time, beating well between each egg yolk.
Add butter and beat till well incorporated.
Fold in flour, baking powder and 5 spice powder in 3 batches.
Stir in brandy.
Spread about 5 heap tbsps ( 140g ) of mixture onto a greased cake tin.
Bake for about 10 to 15 minutes, top and bottom heat till golden brown.
Press batter gently to release any trapped air to have a firm cake.
Shift to grill function from second layer onwards.
Repeat till all batter is used up.
( Second layer onwards will take about 5 minutes )
If there are bumps occurred during baking, use a cake tester to prick it.
( to have beautiful layered done )
Finally, invert cake immediately after removing from oven to cool.
Remove baking paper also.
