Braised Pork With Potatoes



Can say that every kid in my family likes potatoes. And that includes my kids as well. I will always cook this dish with lots of gravy because my kids will make their rice " nasi banjir " style like eating with soup.

Ingredients :


200g pork tenderloin - cut into small pieces
1 large potato - cut into small pieces 
1 tsp minced garlic
1/3 tsp salt or to taste
1 1/2 cup water
cornstarch solution ( 1/2 tbsp cornflour + 4 tbsp water )

Marinate pork : ( marinate for 1/2 hour )
1 tbsp soy sauce
1/2 tbsp oyster sauce
1/2 tbsp cornflour
dash of pepper

Method :



Heat 1 cup oil in a non stick wok. Deep fry potatoes till 90% cooked. Dish up and keep aside.


Leave 2 tbsp oil in wok after frying the potatoes. The balance of oil can be used to cook other dishes.
Heat the oil and add in minced garlic.
Saute till garlic smells fragrant, then add in pork.
Saute till pork changes colour.



Add in fried potatoes, mix them evenly and stir fry for another minute.
Finally add water and salt, lower heat and let it simmer covered for 15 minutes or till potatoes had turned soft.



If you find that the gravy is a bit watery, shift back to high heat and thicken gravy with cornstarch solution. Likewise, add more water if it's too dry. 
When gravy starts to bubble, off heat and dish up.
