Alcohol Free Orange Fruit Cake


Gong Xi Fa Cai to everyone. Was not in the mood to post anything because the BAD weather got me sick!! Well, I did invite my parents-in-law over for CNY dinner, but FIL asked me to go over his place and he's cooking. Aiyoh... sooo embarrassing. ( This explains my cooking skills lah )

Okay, back to the fruit cake. Not too sweet to my liking and well received by family members. Yums..
( Recipe adapted from Wendy with some changes )

Ingredients :



150g glace cherries ( mixed chopped red and green cherries )
100g raisins ( I replaced with chopped pitted prunes )
200ml orange juice
2 heaped tbsp orange zest
( Soak altogether overnight, but I soaked them for up to 1 week )


250g butter
150g sugar
225g all purpose flour ( I used plain flour )
4 large eggs

Method :


Cream butter and sugar until light and fluffy.


Beat in eggs, one by one, beating well after each addition.


Mix in flour till well combined.



Fold in soaked fruits and remaining juice.


Place batter into a lined 7" x 7" cake tin.
Bake at preheated oven at 160C for 1 hour and 20 minutes 
or 
until bamboo skewer inserted at the centre of the cake comes out clean.


Remove from oven and let it cool completely before removing from cake tin.

  7. Oh, now only i saw it. LOL.
    You soak for 1 week, it's fresh juice leh, u're not worried abt it spoiling?
    All purpose flour is the same as plain flour.
    US calls it APF and UK is plain. Same thing la, just like toilet and washroom, truck and lorry.

  8. Really?? Thanks for informing me about the US and UK thing. Haha. I placed it at the end of the fridge and it was still ok when I took it out. :)
