Pineapple Tart Pastry (Pineapple Tart)


My first batch of pineapple tarts for my family, yum yum.

Ingredients :




340g plain flour
2 tbsp icing sugar
1/2 tsp salt
200g cold butter ( I used SCS butter )
1 egg yolk
1/2 tsp vanilla essence
5 tsp iced cold water
1/2 tsp baking powder

Egg glace : Lightly beat 1 egg yolk with 1 tsp water ( omitted )

Method :

Sieve flour, baking powder and icing sugar together. 
Stir in salt and blend well.
Beat egg yolk with vanilla essence lightly.



Put all butter into flour mixture and cut butter into small pieces with a knife in the flour.


Rub butter into flour until like bread crumbs.


Add egg yolk and ice water into flour and use fork to blend well to form dough. 


Refrigerate for 1 hour.


Roll pineapple jam into small balls.


Remove dough from fridge and use a rolling pin to roll out into 7mm thick and cut with tart cutter.
Place tart onto baking tray lined with baking sheet.
Bake at 200C for 10 mins.



Remove from oven and lightly press the pineapple filling onto the tarts.


Bake again at 180C for 10 to 15 minutes or until golden colour desired.


My very first batch of pineapple tarts with HUGE fillings. Ha Ha.

  2. Thanks. My family likes to pop the tarts into their mouth, so I made it just nice ( small enough ) for them and my son likes to take pictures with the ' BIG GRIN ' at that time, LOL.
