Steamed Mini Pandan Cake


Seems to be making quite a lot of cakes lately. :P

Well, having kids 24 hours a day at home will need stuffs like these for them to munch and munch and munch!

This cake is princess's favourite because it's not only soft and fluffy but with smells of fragrant pandan too.

Ingredients :


( A )
3 large eggs
150g caster sugar
1 tsp ovalette

( B )
150g self-raising flour
100ml thick coconut milk
1 tbsp pandan juice ( kaw kaw one :D )
1 tsp vanilla essence

Method :


Whisk ( A ) till light and creamy with mixer.
Add in self-raising flour, coconut milk and remaining ingredients ( B ).
Mix well.



Bring water to boil in a steamer.
Spoon batter mixture evenly till 80% full in paper cups. ( Grease the cup moulds if cup moulds are used instead )
Steam in a preheated steamer for 8 to 10 minutes in high heat.


Remove and set aside to cool.


Serve.

  1. I failed in several trials in steaming cake. Next, I wanna try steamed banana cake. :)

  2. What I learnt from my past experience is that I really need to whisk the batter till THICK AND FLUFFY!! If not, doomed!!! LOL.
