Gungbao Chicken

I still remember the day hubby cooked a complete meal for the very first time. Well, it was my Birthday and he volunteered to cook for dinner. U know lah, **NEWLY WEDS ** Ha! Ha!

This was the main dish we had and can say I was very lucky to be able to eat hubby's cooking.

Why? Because he is the type of person who can sit down and read the newspaper the whole day. YESS!!! THE WHOLE DAY!!!!

Well, still waiting for the second round, hee hee.

Ingredients :

1 chicken breast - cut into small cubes
2 spring onions - cut into 2 inch length
3 dried chili - halved
4 slices ginger
1 tbsp soy sauce
1/2 tbsp sugar
dash of sesame oil
oil for frying
salt ( optional )

Marinate : ( marinate for at least 1/2 an hour )

1 tbsp soy sauce
1 tbsp rice wine
1/2 tbsp cornflour

Method :

Preheat oil in a wok and deep fry marinated chicken cubes for 2 minutes.
Dish up, drain and set aside.

Discard oil leaving 2 tbsp in wok and saute ginger, spring onions and chili till fragrant.

Add in chicken cubes and stir fry for another minute in high heat.
Finally, add in soy sauce and sugar and stir fry for another minute to allow the seasonings to coat well onto the meat. ( adjust seasoning with salt )
Dish up and sprinkle a dash of sesame oil into dish.
Serve hot with rice.
