Steamed Egg White Rainbow Cake


A very beautiful cake with only egg whites used. 

This cake is moist and spongy and hubby like it. My kids liked the combination colours of the cake but didn't like the essence I used, so they didn't eat a single piece. :(

Guess the essence smell was too strong for them!

Ingredients : ( Made half the recipe )


250ml egg white
150g caster sugar
1/2 tbsp ovalette
1/4 tsp salt
50ml evaporated milk
25g melted butter or oil
1/2 tsp baking powder
100g plain flour
25g corn flour
13g milk powder

1/2 tsp vanilla essence
1/2 tsp strawberry paste
1/2 tsp lemon paste ( I used orange paste )
1/2 tsp mocca paste ( I used coffee paste )
1 tsp pandan paste

Method :


Whisk egg white, sugar, salt, ovalette till light and fluffy.
Sift flour, corn flour and milk powder and put aside.
Mix melted butter and evaporated milk and put aside.


Add melted butter mixture into egg white mixture and mix till well combined.
Add in vanilla essence.
Add in sifted flour a little at a time.


Divide batter into 4 parts and add each paste to each part.
Preheat steamer and greased a 8" x 8" cake pan.



Steam 7 minutes for each layer, starting from pandan, mocca, lemon and top layer strawberry paste.



Steam for a further 15 minutes and remove pan from steamer.
Let cool, unmould and slice.
