Rice Cooker Chicken Rice

 

Another one of my simple one dish meal for my kids. Well, hubby's not around again, so don't have to cook typical 3 dish and 1 soup meal for dinner, ha ha.

My lil devils love this rice dish and can cook it often for them.

Ingredients :


1 1/2 cup rice
1 chicken breast - cut into small cubes
1 chinese sausage - skin removed and cut into small pieces 
3 mushrooms - soaked till tender and cut into small pieces
old ginger

Marinate : ( Marinate for at least 2 hours )
{ chicken and mushrooms together }


2 slices of ginger
1 tbsp freshly grated ginger juice
2 tbsp light soy sauce
1 tsp dark soy sauce
1 tbsp oyster sauce
1/3 tsp sugar
1 tsp shaoxing wine
dash of sesame oil
dash of pepper
1/2 tsp cornflour

Method :


Cook rice in rice cooker.
Let rice cook till holes starting to form like photo above.


Then, add in the marinated chicken and mushroom.
Top with chinese sausage.
Cover and let it cook till rice is done.
Wait for another 5 minutes before mixing them together. ( Rice cooker in keeping warm setting )



Finally, chicken rice is ready and can mix them up.


Scoop rice onto serving plates and serve hot.
