Stir Fried Pumpkin With Dried Shrimp

It's Halloween and Halloween means abundance of cheap pumpkins all around. :D

Loved the sweet flesh and only got to know about the nutritional values after searching the internet!

The benefits include :

Alpha-carotene - prevent cataract formation.
Beta-carotene - helps prevent build up of cholesterol on arterial walls, thus reducing chances of strokes.
Potassium - lowering risks of hypertension.
Zinc - boosts immune system and improves bone density.
Fiber - good for bowel health.


Bought this piece for RM1 from the wet market

Peeled and cut into small chunks

Tastes superb! Sweet, crunchy and not salty after frying

After frying

Ingredients :

Pumpkin - cut into small chunks
2 tbsp dried shrimp - fried till crispy
1 tsp minced garlic
5 tbsp oil
1/2 tsp salt ( optional )

Method :

Heat oil in wok and fry dried shrimps till cooked and crispy.
Dish up and set aside.
With the remaining oil in wok, saute minced garlic till fragrant.
Add in pumpkin and stir fry for 2 minutes.

Add in water just enough to cover the pumpkin ( photo above ) and salt.
Bring to boil, lower heat and let it simmer till pumpkin is soft but not mushy.

Dish up and sprinkle dried shrimps on top.
Serve hot.
