Steamed Banana Cake

Wanted to bake fruit cake today because hubby had requested for it, but saw the bananas bought a few days ago had gotten very ripe this morning.

So, no fruit cake but banana cake, ha ha.

Had made this cake numerous times because it's really soft and fluffy and good keeper too. My children loves this cake and can bring it to school tomorrow. :P

Ingredients :

2 large eggs
100g sugar
200g ripe bananas, mashed ( about 4 pisang emas )
150g self-raising flour
1/8 tsp baking soda
75g corn oil

Method :

Sift together self-raising flour and baking soda, set aside.

In a mixing bowl, whisk together eggs and sugar till ribbon stage. ( changed in colour )

Mix in mashed banana, beat till well combined.

Gently fold in flour mixture and oil, taking care not to deflate the eggs and sugar mixture.

Pour batter into pan lined with baking paper and steam at high heat for 40 mins or till an inserted skewer comes out clean.

Remove from steamer and allow cake to stand a few minutes in pan before turning into wire rack to cool. Cut into small pieces.

Yummy.....

Thanks Amanda for the great recipe!!

  3. Thanks for the sharing. Now I prefer steamed cake without butter, sounds healthier. I just steamed an orange cake on last Sunday. :)
