Watercress Soup


This is a perfect soup to clear our body heat and to smokers, it is very effective in cleansing the lungs from toxins.

Watercress is said to contain significant amounts of iron ( benefit to people with anaemia ) , calcium and folic acid, in addition to vitamin A and C.

The soup tastes naturally sweet with a soothing effect and my family loves it.

Ingredients :


3 handfuls of watercress - after trimming
1 tbsp pitted dates
5 small scallops
size of a fist of pork loin
1.5 liter water
salt to taste

Method :


Bring water in a small pot to boil and add in pork loin. Continue to boil until all the scums from the pork rise to the surface. Remove pork and wash away all the scums.


Fill a medium pot with water and add in pork loin and dates.
Bring to boil.


When the water starts boiling only you add in watercress and scallops.
This is to prevent the soup to become bitter from the watercress and fishy smell from the scallops.


Bring back to boil and switch to low heat and let it simmer for 2 to 2 1/2 hours covered.
Add salt to taste.
Serve hot.

    Yes, this is a very nutritious soup too. My family and I will drink this soup every week to clear our body heat from the harsh weather nowadays.
