Malabar Spinach Soup aka Chan Choy Tong


This is a very nutritious and easy to cook soup. The malabar spinach has a soft texture and tastes sweet.
It is also high in vitamin A, vitamin C, iron and calcium.

My mom used to tell me that people who smokes can benefit from drinking the soup. It helps to nourish the lungs. But, to me, I do know that it's really good for our bowel movement. :P

Ingredients :

3 handfuls of malabar spinach - after trimming
1 tbsp anchovies - deveined 
1 salted egg
1 litre water
1 tbsp oil
salt to taste

Method :


In a dry non stick wok, saute anchovies till dry.
Add in oil and saute anchovies till lightly brown and crispy.


Add in water and bring to boil.


When the water starts to boil, add in malabar spinach and stir evenly.
Let it simmer for a minute then add in salted egg.
Let the egg cook without stirring. U can break the egg yolk with a spatula when it's half cooked.


Finally, taste the soup first before adding salt because the salted egg has added saltiness to the soup.
Let it simmer for another 2 minutes.
Dish up and serve hot.
