Fried Chicken With Curry Leaves


This is one of my favourites too and I haven't been cooking this dish for quite sometime.

I always prefer cooking steamed food because it's always healthier, easier and my kitchen is always cleaner. Frying will sprinkle the oil everywhere making it very tedious for me to clean up afterwards. :(

But, this dish tastes very yummy with fragrant smell coming from curry leaves. :))

Ingredients :


2 chicken thighs - chopped into small pieces
2 tbsp curry leaves
oil for deep frying

Marinate : ( marinate chicken for at least 1 hour )

1 tsp light soy sauce
1/2 tsp salt
1/2 tsp pepper
1 tbsp cornflour

Seasoning :

1/2 tbsp oyster sauce
1 tbsp light soy sauce
1 tsp sugar
100ml water
dash of chicken stock granules ( optional )

Method :


Deep fry chicken in hot oil for 5 minutes.
Dish and drain.


Heat 2 tbsp oil and saute curry leaves till fragrant.
Add chicken, seasoning and stir fry in high heat till dry.
Dish up and serve hot.

  1. Me too. I prefer to stir-frying, steaming and baking. It's much more easier. Once a while, I also pan-fry meat dishes, but I seldom deep-fry.
