Fern Shoots or Fernbrakes in Hot And Sour Dressing


I started to fancy eating fern shoots since trying them from Malay food stalls or restaurants. But, Malays will always cook them in coconut milk which I find it not so healthy for my age, ha ha. Cholesterol.... Cholesterol.....

While reading Wendy's blog, ahah, I finally found it. This recipe is not only healthy but very very appetizing too!

Ingredients :


2 bundle fern shoots ( about 3 handfuls after trimming )


1 tbsp minced garlic
1 tbsp minced shallots
1 red chili - minced
1/2 tsp salt
2 tbsp lemon juice
2 tbsp oil
1 pc wantan skin - contains lye water that makes veges remain green after blanching
4 cups water

Method :


Blanch fern shoots in hot boiling water with wantan skin in it for 2 minutes. Drain and set aside.


Preheat a non stick pan with 2 tbsp oil and saute shallots and garlic till almost golden.
Add in chili, saute for 2 seconds then add in salt.
Mix them all up evenly, dish up and set aside.


When ready to serve, mix fern shoots, sauteed ingredients and lemon juice together in a big bowl.
Toss well and transfer to a serving plate.
