Braised Pork Belly With Coriander Leaves

This dish was very often cooked by my mom when I was a little girl.
It was my dad who taught her how to cook this dish. Ha! Ha!




Ingredients :
300g pork belly - cut into 1 cm slices
coriander leaves - cut into 2 cm length ( 2 handfuls )
1/2 tbsp minced garlic
salt
sugar
water

Marinate : ( marinate pork belly for at least 1/2 hour )
1 tbsp soy sauce
1 tsp sugar
1 tsp dark soy sauce
dash of pepper
2 tsp cornstarch

Method :




1 ) Heat 2 tbsp oil in a wok. 
2 ) Put in marinated pork belly and stir fry for 10 seconds. Then, add in minced garlic.
3 ) Stir fry till meat changes colour and aromatic.



4 ) Add in water just enough to cover the meat.
5 ) When the water starts boiling, switch to low heat, add a pinch of salt and sugar and cover wok.





6 ) Let it simmer for 5 minutes, then add in coriander leaves.
7 ) Cover wok again and simmer till meat is tender and sauce has reduce to half.
8 ) Dish up and serve hot with rice.
