Amaranth Soup aka ' Yin Choi Tong '


Had been cooking very simple meals nowadays. Whole family got sick, me with a bad sore throat and cough, princess with eye infection and cough, prince with cough and flu and hubby with headaches. 

" BLAME IT ON THE WEATHER "

This soup is my grandma's recipe and it's very very simple to cook and always tastes good. My mom likes to use anchovies instead of eggs but the whole family likes eggs better, haha.

This vege is my favorite because it is high in vitamins, helps to enhance our eyesight and very good for our bowel movement too. :P

Ingredients :



3 handfuls of amaranth leaves and stems - after trimming
1 clove garlic - peeled and lightly bruised
1 egg, lightly beaten with 1 tsp light soy sauce
800ml water
1/2 tbsp salt or to taste
2 tbsp oil

Method :


Preheat wok with 2 tbsps oil and fry eggs. 
Cut the eggs to smaller pieces using the spatula.


Add in water and bring to boil.


Add in amaranth leaves, cover wok and let it simmer at high heat for about 3 minutes or till leaves are tender.


Add salt to taste.


Dish up and serve hot.
