Steamed Red Tilapia With Hot And Sour Plum Sauce

I've got to admit that I will buy a red tilapia fish home everytime I see them still alive and jumping on the fish monger's table, haha.

Today, I'm going to steam this fish with hot and sour plum sauce. The meat is so tender and doesn't have any mud smell at all, plus the sauce makes it super delicious.

Ingredients :

1/2 of a large fish

Sour plum sauce

1 tbsp fermented soy bean
1 1/2 tsp minced garlic
1 tbsp sour plum sauce
2 chili padi - chopped
2 slices ginger - julienned
1 tbsp oil
1/2 tsp sugar
1 tbsp water
( mix them all up )

Method :

Run the fish through hot boiling water for 2 seconds to get rid of any fishy smell

Preheat steamer and pour the sauce evenly on top of fish
Steam for 8 to 10 minutes
( a whole large fish should take about 15 minutes )

Dish up and serve hot
