Here's another soup recipe by Table for 2 or more..... :) This is my second time making this soup because I find it not only nutritious but very tasty too.
Size of a fist of lotus root - cut into small chunks
Size of a fist of pork loin ( I used pork tenderloin because ran out of pork loin )
5 pcs dried mussels
1 tbsp wolfberries
5 pcs seedless red dates
2 tbsp raw peanuts
Size of 1/3 of a palm of dried cuttlefish
1.5 litres of water
1/3 tbsp salt or to taste
Bring water in a small pot to boil and add in pork loin. Continue to boil until all the scums from the pork rise to the surface. Remove pork and wash away all the scums.
In another medium large pot, put cleaned pork loin together with the rest of ingredients except the salt.
Bring to boil and switch to low heat and let it simmer for 2 to 2 1/2 hours.
Add salt to taste.
