Saw some crabsticks sitting in the fridge this morning. Why not make some crabstick sushi for lunch?
1 cup calrose rice
2 cups water
1 1/2 tbsp vinegar
1 tbsp castor sugar
Crabsticks ( panfried with 1 tbsp oil in a non stick pan )
Roasted seaweed ( nori )
Cook rice with water in rice cooker.
Once ready, transfer rice to a big bowl and add in vinegar and sugar. Mix thoroughly.
Cover bowl with a damp cloth to prevent rice from drying out while waiting for it to cool.
Lay bamboo mat on table. Place one sheet of nori on the bamboo mat.
Spread 2 to 3 heap tablespoonfuls of rice on the nori.
Place ingredients on the layer of rice and roll once to make a long sushi log, squeezing slightly along the entire roll.
With a sharp knife, slice off the ends and the rest of the sushi log into 2 cm thick pieces.
